Peanut Butter Recipes

Edible Peanut Butter Playdough

Served at the cooking class on "Peanut Butter"
Ingredients:

1 1/2 cup peanut butter
2/3 cup honey
1 1/2 cup powdered milk

Directions:

Mix all ingredients well. Add more powdered sugar until the playdough is workable with your hands.  Optional: Use raisins, nuts, or candy to decorate

Peanut Butter Playdough for Lactose Intolerant

Ingredients:

1/2 cup peanut butter
1/4 cup honey
1 oz -6 oz corn meal or corn flour

Directions:

Mix all ingredients well. Add more corn flour until the playdough is workable with your hands.  Corn Muffin Mix (like Jiffy-Mix) can be substituted for corn meal

Chocolate Oatmeal No-Bake Cookies

Served at the cooking class on "Peanut Butter"
Ingredients:

2 cups sugar
1/2 cup cocoa powder
1 stick butter
1/2 cup milk
1 tsp vanilla
3 cups quick cooking oats
1/2 cup peanut butter

Directions:

Combine sugar, cocoa, butter, and milk in a saucepan.  On medium heat bring to a boil for 1 full minute.  Remove from heat. Stir in peanut butter, vanilla, and oatmeal. Drop by spoonful onto wax paper. Let cool for at least 30 minutes.

Indonesian Pork Satay

Served at the cooking class on "Peanut Butter"
Ingredients:

2 TBSP peanut butter
1/4 cup onion, minced
1 garlic clove, minced
2 TBSP lemon juice
2 TBSP soy sauce
1 TBSP brown sugar
1 dash hot pepper sauce
1 TBSP vegetable oil
1 lb. boneless pork loin, cut into 1/2 inch cubes

Directions:

Blend peanut butter, onion, garlic, lemon juice, soy sauce, brown sugar, hot pepper sauce, and vegetable oil together.
Marinate pork in blended mixture for 10 minutes.
Thread pork onto skewers (if using bamboo skewers, soak them in water for 30 minutes to prevent burning).
Grill or broil for 10-12 minutes, turning occasionally.
Optional: add bell peppers and onion slices to skewers.
